Estate grapes were hand-harvested, lightly crushed and destemmed, then placed into open-top fermenters for a 24-hour cold soak. The bins were inoculated to start fermentation and saw twice-daily punch downs. Malolactic fermentation occurred in barrel, allowing the wine to soften and integrate fruit and oak. Aged for 12 months in French oak barrels, this wine exhibits a dark ruby color with notes of earth, blackcurrants and spice. Gripping tannins and fresh acidity create beautiful aging potential.
