Hand-picked grapes were lightly crushed and destemmed, then placed into open-top fermenters where they cold soaked for 24 hours. The bins were inoculated to start fermentation and saw twice-daily punch downs. Malolactic fermentation occurred in barrel, allowing the wine to soften and integrate its fruit character with the oak. Aged for 12 months in French oak barrels, this wine exhibits a rich ruby red color, notes of dried fruit, cherries and spice. The palate reveals a velvety texture with refined tannins on the finish.
